Kids' Spare Tires and Brake Hoses

Ingredients

  • 1 cup wheel-shaped pasta (the spare tires)
  • 1 cup rigatoni (the brake hoses)
  • 2 cups white sauce (a mix or your own recipe)
  • 1 16-oz. package grated cheddar cheese
  • 1 cup creamy cottage cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • 1/3 cup sweet onion, diced (optional)
  • 1/3 cup plum tomato, seeded, diced (optional)
  • 1/3 cup carrot, grated (optional)
  • 1/3 cup frozen peas, thawed (optional)
  • 1/4 cup green or red sweet pepper, diced (optional)

Directions

Cook the pasta according to package directions and drain. Fold in the white sauce, cheeses, sour cream, seasonings and vegetables of your choice and put in a buttered, microwave-safe casserole. Cover with plastic wrap and refrigerate. To bake, heat the covered dish in the microwave oven on medium until it's evenly heated. Serve with hot dogs and corn on the cob from the grill, an ice bucketful of crunchy celery and carrot sticks, and microwave popcorn, sprinkled lavishly with cinnamon sugar, for dessert. All kids love macaroni and cheese, especially when it has a wacky name like this one. Add any optional vegetables for color and texture contrast, omitting those your kids find yucky. This is the perfect cook-and-carry casserole to warm in your RV's microwave oven.
