Ingredients
- 1 Tbsp olive oil
- 8oz of your favorite tortilla chips
- 8oz hot tomato sauce
- ½ cup Mexican cheese
- ½ cup pepper jack cheese
- ½ can black beans
- ½ can corn
- Optional: choice of protein (cooked ground beef, chicken, shrimp, etc.)
- Optional: Toppings of choice (green onions, avocado, black olives, jalapeños, lime, sour cream, etc.)
Instructions
- Oil the bottom of a large dutch oven.
- Spread about ⅓ of the chips on the bottom of the dutch oven. Next top with ¼ can tomato sauce, ¼ can black beans, ¼ cup Mexican cheese.
- For the second layer, repeat the layering except add in the corn instead of the beans and the peperjack cheese instead of the Mexican cheese.
- Add all the remaining chips, sauce, cheese, beans, and corn in a final third layer.
- Cover the dutch oven and place on a metal grill over campfire for about 10 minutes, until the cheese has melted.
- Remove from heat and top with you desired toppings.
- Serve warm and enjoy!
