Cut up bread into bite sized pieces. In a greased crockpot, layer 1/3 of bread chunks and 1/2 cup blueberries. In a separate bowl, combine eggs, cream, cinnamon, brown sugar, salt, vanilla and lemon zest. Pour 1/3 of this mixture over bread and berries. Continue layering bread, blueberries and egg mixture two more times. Cover and cook on low for 8 hours. 20 minutes prior to serving, take the lid off the crockpot and let sit on warm.
