Heritage Chicken Wings

This recipe features roasted or grilled chicken and wings prepared two ways: Hot Raw Honey and Ginger Yuzu Tamari Cashew, both of which are healthier alternatives to conventional sauces, emphasizing natural sweetness, bold flavors, and mindful eating.

Ingredients

  • 12 chicken wings
  • 2 tbsp avocado oil (sub coconut oil, beef tallow, or chicken fat)
  • 2 tsp sea salt
  • 1 tsp black pepper
  • ¼ cup raw local honey
  • 1 tbsp roasted chili paste or 1 tsp chili flakes (adjust for desired spice level)
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tbsp apple cider vinegar
  • ½ tsp sea salt
  • ½ tsp black pepper
  • ¼ cup tamari (gluten-free soy sauce)
  • 2 tbsp yuzu juice (or substitute fresh lemon juice)
  • 1 tbsp rice wine vinegar
  • 1 tbsp grated ginger root
  • 1 tbsp sesame seeds ½ c
  • ½ cup toasted cashews, chopped (for garnish)
  • 2 tbsp chopped 1 garlic clove, minced
  • Fresh cilantro (for garnish)

Instructions

SERVES: 4-6
PREP TIME: 15 minutes
COOK TIME: 40-50 minutes

1. Prepare the Chicken:

  • Preheat your oven to 400°F (or preheat your grill to medium-high heat if grilling).
  • Pat the chicken wings dry with paper towels to ensure a crispy finish.
  • Rub the wings with avocado oil, sea salt, and black pepper. Set aside.

2. Make the Hot Raw Honey Marinade:

  • In a mixing bowl, whisk together the raw honey with roasted chili paste, smoked paprika, cumin, apple cider vinegar, sea salt, and black pepper.

3. Make the Ginger Yuzu Tamari Cashew Marinade:

  • In a small bowl, whisk together tamari, yuzu juice (or lemon juice), rice wine vinegar, ginger, garlic, and sesame seeds.

4. Marinate and Cook the Chicken:

  • For the Hot Raw Honey Chicken: Brush the wings generously with the Hot Raw Honey Marinade.
  • For the Ginger Yuzu Tamari Cashew Chicken: Brush the wings with the Ginger Yuzu Tamari Cashew Marinade.
  • Place the marinated wings on a baking sheet (if roasting) or directly onto the grill.

5. Roasting or Grilling the Chicken:

  • If Roasting: Roast the wings in the oven at 350 for 45-55 minutes, turning and basting halfway through with reserved marinades for deeper flavor and a sticky finish.
  • If Grilling: Grill the wings on medium-low heat for 45-55 minutes, flipping and basting frequently to ensure even cooking and flavor development.

6. Serving:

  • Once wings reach an internal temperature of 165°F, remove from heat and let rest for 5-10 minutes.
  • Garnish the Ginger Yuzu Tamari Cashew chicken with toasted cashews and fresh cilantro for a burst of freshness.

7. Serve:

  • Serve the Hot Raw Honey Chicken for those who enjoy a sweet and spicy kick.
  • Serve the Ginger Yuzu Tamari Cashew Chicken for a more savory, tangy, and nutty.
