Maple Hasselback Campfire Sweet Potatoes
Ingredients
- 2 - Sweet potatoes
- 2 – 3 TBSP Butter(melted)
- 1 tsp Cinnamon
- 1-2 TBSP Maple syrup
- Marshmallows (optional)
- Pecans (optional)
- EQUIPMENT: tin foil, a cutting board, two wooden spoons, basting brush
Instructions
Servings yield: 2 Prep time: 10 minutes Cook time: 45 min-1 hour
- Place washed sweet potatoes on your cutting board, one at a time.
- Place the two wooden spoons alongside the potatoes as a guide for cutting your slits to make them hasselback.
- The wooden spoons keep you from cutting through the potato.
- Melt butter and add cinnamon and maple syrup to the mixture, then baste the sweet potatoes generously.
- Wrap in tin foil and place on the fire to cook or you could place them in the oven, or even on your grill.
- Keep an eye out for tenderness to know when it’s ready which is usually 45 minutes – 1 hour.
- Remove from fire and add more butter mixture as well as top with your favorite additions such as pecans and marshmallows.
