Maple Hasselback Campfire Sweet Potatoes

Ingredients

  • 2 - Sweet potatoes
  • 2 – 3 TBSP Butter(melted)
  • 1 tsp Cinnamon
  • 1-2 TBSP Maple syrup
  • Marshmallows (optional)
  • Pecans (optional)
  • EQUIPMENT: tin foil, a cutting board, two wooden spoons, basting brush

Instructions

Servings yield: 2       Prep time: 10 minutes       Cook time: 45 min-1 hour

  1. Place washed sweet potatoes on your cutting board, one at a time.
  2. Place the two wooden spoons alongside the potatoes as a guide for cutting your slits to make them hasselback.
  3. The wooden spoons keep you from cutting through the potato.
  4. Melt butter and add cinnamon and maple syrup to the mixture, then baste the sweet potatoes generously.
  5. Wrap in tin foil and place on the fire to cook or you could place them in the oven, or even on your grill.
  6. Keep an eye out for tenderness to know when it’s ready which is usually 45 minutes – 1 hour.
  7. Remove from fire and add more butter mixture as well as top with your favorite additions such as pecans and marshmallows.
