Peel and cut sweet potatoes into 1/2-inch cubes. In a large skillet, heat olive oil and cook sweet potatoes until tender. Add black beans and sauté for a few more minutes. Add spinach and cook until wilted. As a bonus, add salt or a touch of lime juice to taste. Enjoy this healthy meal!
