Did you know quinoa is one of the simplest, most versatile, & healthiest things to pack in your RV for a camping trip?
Our best advice is to cook the quinoa the night before you leave, and pack it in a reusable container.
Now you can use it in any recipe! One of our favorite things to do is to toss cooked quinoa into the skillet with some vegetables for a delicious and healthy side dish.
Add 1 cup of quinoa per person to your skillet over a campfire or on your RV stove, and toss a handful of spinach and about 2 cups of chopped tomatoes for this easy skillet side dish. Heat until the spinach is wilted.

How to Make It
Ingredients
- 1 tbsp of your favorite oil or butter
- 1 cup of cooked quinoa per person (cook according to package directions)
- 1 large handful of spinach
- 2 cups chopped tomatoes
- Salt and Pepper to taste
Directions
Preheat skillet with 1 tbsp of your favorite oil or butter.
Chop tomatoes.
Add pre-cooked quinoa to a preheated skillet.
Toss in a handful of spinach and the chopped tomatoes.
Stir often, and remove from heat when spinach is wilted.
Season with salt and pepper if desired.
