Slow Cooker Chicken Corn Chowder

Ingredients
- 1 lb. chicken breast
- 4 cups chicken broth
- 5 small, red potatoes cut into chunks
- 8-oz canned green chiles
- 1 small onion diced
- 2 cans cream-style corn
- 2 cups milk (whole or low-fat)
- 1 tsp onion powder
- 6 strips of turkey bacon cooked and chopped into small pieces
- ½ tsp. pepper
- ½-1tsp salt depending on taste
- Optional: chopped parsley
Instructions
- Place the chicken breast, chicken broth, potatoes, chiles, onion, and corn into the slow cooker. Set to high and cook for 4-5 hours.
- Take the chicken breasts out of the slow cooker and shred the chicken with a fork. (Can also cut into cubes) Place the shredded chicken back in the slow cooker.
- Add in milk, onion powder, turkey bacon, pepper, and salt and stir well. Set slow cooker to high for another 15-20 minutes.
- Sprinkle with parsley if desired.
- Serve and enjoy!
