“As a chef, it’s hard to get away from the kitchen,” Viet says. “I try to get out as much as I can.” But when he does, he finds solace in the mountains. “Coming to the mountains with my wife Alexis, it’s a great way to just break away from the everyday hustle and bustle of city life.” For Viet, the outdoors is more than just a retreat; it’s a source of inspiration. It’s a dish of some roasted trout, some potatoes, and the way that I like to eat when I’m outdoors is just very simple but using ingredients that really kind of evoke a sense of place and time,” Viet shares. He crisps up trout skin to perfection and perfumes the dish with local spruce, lemon slices, and thyme. “Something about cooking outdoors, being in the outdoors, it makes everything taste so much better,” he says.

Cilantro Chimichurri

Ingredients

  • 2 cups of fresh cilantro (stems and leaves) about 1 large or 2 small bunches
  • 3 cloves of garlic peeled
  • 1/2 of a small red onion, peeled and cut into chunks or 1/4 medium
  • 2 tsp red pepper flakes
  • 2 tsp of dried oregano
  • 2 tbsp red wine vinegar
  • 1 cup olive oil
  • 1 tsp fish sauce
  • Salt and pepper to taste

Instructions

  1. In a blender or food processor, add the cilantro, garlic, onion, pepper, oregano, vinegar, fish sauce, and 1/2 of the olive oil. Alternatively, you can chop all the dry ingredients and add to the wet ingredients. If chopping by hand, make sure you are chopping the ingredients finely.
  2. Pulse to mince the ingredients.
  3. Add the remaining olive oil and gently stir to combine.
  4. Transfer the sauce to a bowl, cover, and let it sit 20 minutes at room temp before serving.

Trout

Ingredients

  • 3-4 whole trout, cleaned and gutted
  • 2 lemons sliced thinly
  • One bundle of fresh thyme
  • 2 tb olive oil
  • Salt and pepper

Instructions

Brush olive oil all over the fish and inside the belly cavity. Season the fish with salt and pepper, including inside the belly. Slice the two lemons thinly and stuff each trout belly with 3-4 slices of lemons and add a small bundle of thyme to the belly.

Cooking

  1. If you are grilling, make sure the heat is on medium high and cook each side of the fish for about 6-8 minutes, being careful not to lift the fish too much.
  2. If you are roasting in the oven, preheat the oven at 375F and roast in the oven for 20 minutes until the flesh is no longer transparent.
