- 1 pound chorizo pork or ground beef
- 1 onion, chopped
- 1-3 peppers of any kind, for your desired heat level
- 4 flour tortillas
- 1 bag tortilla chips
- 1/2 pound processed cheese loaf
After you have a good bed of coals on your campfire, fry ground beef and chorizo, onions and peppers in a cast-iron skillet. Remove excess grease by sopping up with a couple of pieces of bread. Add cheese! Cover the bottom of a paper plate with one of the large tortillas, spoon on and toss some chips on top.
I have used this recipe as a snack, lunch or dinner. It is hearty, filling and oh-so-delicious. If you have leftovers, save and add to scrambled eggs the next morning!
