Cooking Temp: Low-Medium
- 1 pound boneless pork, cubed
- 2 teaspoons vegetable oil
- 1 Tablespoon taco seasoning
- 1 bottle chunky-style salsa or fresh chunky salsa
- 1/3 cup peach preserves
Coat pork with taco seasoning. Heat oil in a skillet and add pork. Brown on all sides, stirring occasionally. Add salsa and peach preserves. Lower heat, cover and simmer for 15-20 minutes. Serve over rice.
*NOTE - can substitute pork chops for cubed pork
