Crockpot Blueberry French Toast Casserole

  • 1 loaf cinnamon swirl bread
  • 1 1/2 cups blueberries
  • 12 eggs
  • 2 tsp cinnamon
  • 4 cups half and half
  • 1/4 cup brown sugar
  • dash of salt
  • 2 tsp vanilla
  • 1 Tablespoon lemon zest


Cut up bread into bite sized pieces. In a greased crockpot, layer 1/3 of bread chunks and 1/2 cup blueberries. In a separate bowl, combine eggs, cream, cinnamon, brown sugar, salt, vanilla and lemon zest. Pour 1/3 of this mixture over bread and berries. Continue layering bread, blueberries and egg mixture two more times. Cover and cook on low for 8 hours.

20 minutes prior to serving, take the lid off the crockpot and let sit on warm.
