Jack's Healthy Salad

  • Roma tomatoes
  • Shredded cheddar cheese
  • Sliced black olives
  • Diced or chopped dill pickles
  • Garbanzo beans
  • Sliced/shredded carrots
  • Boiled eggs
  • Low-fat salad dressing
  • Salad shrimp, if you like it


Begin by placing three eggs in a pot and boil them. Mix in a large bowl: lettuce, 1 sliced carrot, 2-3 sliced Roma tomatoes, peeled and diced cucumber, sliced black olives, garbanzo beans, shredded cheddar cheese, diced or cut dill pickles. After eggs have cooled, slice them and add to top of the salad. Add your favorite salad dressing, low fat of course! You can also add salad shrimp, with skin removed, sliced or chopped chicken/turkey. You can enjoy this as a meal, snack or side dish. Bon appétit!
