Chilled Oysters with Cucumber/Pomegranate Sauce

1 cup champagne vinegar

1 shallot, minced

1/2 english cucumber, minced

¼ cup of pomegranate seeds

1 tablespoon sugar


In a small bowl, combine the champagne vinegar, shallots, cucumber, pomegranate and sugar.  Mix with a fork, cover and chill for at least 1 hour.  Serve atop raw oysters.
