2-3 pounds of pork ribs

Case of beer

2 liters of cola

1 large onion

2-3 garlic cloves

Old Bay

Kosher Salt

Dark Chili powder

Fine Ground Espresso

Ribs were previously parboiled with a case of beer, two liters of cola, chunks of onions, whole garlic cloves and a generous dose of Old Bay! Then vacuum packed and chilled for transport to camp.

At camp, rub the ribs with a blend of Kosher Salt, Dark Chili Powder, Fine Ground Espresso, Paprika, Old Bay, Brown Sugar and a touch of Onion Powder. Toss on a hot charcoal grill long enough to crust the outside, and then glaze with Sweet Baby Rays BBQ sauce.
