Quick Sweet Potato Hash

2-3 medium sweet potatoes

2 tablespoons of olive oil

1 15 oz. can of black beans (rinsed and drained)

5 ounces baby spinach

1 Avocado



Peel and cut sweet potatoes into 1/2-inch cubes.

In a large skillet, heat olive oil and cook sweet potatoes until tender.

Add black beans and sauté for a few more minutes.

Add spinach and cook until wilted.

As a bonus, add salt or a touch of lime juice to taste.

Enjoy this healthy meal!
