Cheesy Sausage and Potato Frittata

1⁄2 pound ground breakfast sausage

4 cups frozen, diced potatoes 

4 T butter

6 large eggs 

½ cup red onion, diced

1⁄2 cup full fat sour cream

4 cups shredded sharp cheddar cheese



Preheat oven to 375 degrees F

In a medium skillet over medium heat, melt butter and cook potatoes until golden brown. About 10 minutes.  

Meanwhile, beat your eggs and sour cream in a medium sized bowl. Add a pinch of salt and pepper.

Once the potatoes are golden brown, set them aside and add to your skillet the diced onions and ground breakfast sausage. Cook until the sausage has been cooked through.

Remove the skillet from heat and layer on top of the sausage mixture ½ of the cheese and ½ of the potatoes.

Gently pour all of the egg mixture over the sausage, cheese and potatoes.

Add the remaining potatoes and cheese and bake for 15 minutes. Place under broiler for a minute or two (keep your eyes on the frittata so it won’t burn) to melt the cheese on top.
