Oven Temp: 350
- 2 sticks butter (not substitute)
- 1/2 cup sugar
- 2-1/2 cups sifted flour
Before your trip, cream butter and sugar until light, then blend in the flour. Wrap the dough in plastic wrap and chill in your RV refrigerator. To bake, cut in two and pat each half into a seven-inch circle on an ungreased cookie sheet. Using the tines of a fork, prick lines in each "pie" to mark 16 wedges. Bake about 30 minutes or until very lightly browned at 300 degrees F. Cool slightly and break into wedges. Simple and butterscotchy, these cookie-pies are as easy as, well, pie. The dough can be made at home in your mixer or food processor.
