- 1/4 cup extra virgin olive oil
- 1/2 cup minced onion
- 1 pound lean ground beef
- 1-2 cloves minced garlic
- 2 tablespoons flour
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 small can mushroom stems and pieces, drained
- 1 can cream of mushroom soup, undiluted
- 1 cup sour cream
Melt butter in heavy skillet and saute onion until soft. Add ground beef and garlic and cook until beef is brown. Stir in flour, salt, pepper and mushrooms and cook five minutes. Add soup and simmer 10 minutes. Stir in sour cream and heat just until warm.
You can prepare all except adding the soup and sour cream before you leave home. Mixture can be cooled and put in a resealable bag, then finished at the campsite.
